Corn, Feta and Cream Cheese Dip
Serves 4.
INGRĂDIENTS
For the dip:
– 2 ears of corn, cooked and shelled
– 1 small clove of garlic, peeled, halved, without the germ
– 1/4 to 1/2 small jalapeĂąo pepper, without seeds, sliced
– 35 g (1/4 cup) crumbled feta cheese
– 70 g (1/4 cup) of cream cheese
– Juice of 1 lime
– 3 Tbsp olive oil
– Salt and pepper
To serve:
– Olive oil, crumbled feta, chopped cilantro and green onion
– Crackers, tortilla chips or pita bread
DO IT YOURSELF
1) In the bowl of a mixer, add all the ingredients for the dip and mix until desired consistency.
2) Serve drizzled with olive oil, sprinkled with crumbled feta, chopped cilantro and green onion. Serve with crackers, tortilla chips or pita bread.
Edamame, Kale and Cashew Dip
Serves 4.
INGRĂDIENTS
For the dip:
– 325 g (3/4 lb) of edamame (soybeans) frozen, peeled and cooked
– 2 Tbsp cashew butter
– 1 sprig of kale, without the central stem, coarsely chopped
– 1 small clove of garlic, peeled, halved, without the germ
– 2 Tbsp olive oil
– Juice of 1/2 large lemon
– 3-4 Tbsp of cold water, if necessary
– Salt and pepper
To serve:
– Olive oil, cherry tomatoes sliced ââin half, chopped cilantro, crumbled feta
– Crackers, tortilla chips or pita bread
DO IT YOURSELF
1) In the bowl of a mixer, add all the ingredients for the dip and mix until desired consistency. If the mixture is too thick, add 1 Tbsp of cold water at a time and continue to mix.
2) Serve drizzled with olive oil, sprinkled with sliced cherry tomatoes, crumbled feta cheese and chopped cilantro. Serve with crackers, tortilla chips or pita bread.
